A classic New England Brunch with an Italian Flare
signPeaches is a wonderful, family run Breakfast and Lunch stop that sits just south of the train station in North Conway Village.  For over six years, Carol & Tom Stapinski have been running this local gem of a restaurant, and serving to families and couples of all ages.
Their glass top tables are decorated with the most choice napkin art that children from age 3 to 85 have created while dining.
Peaches and Cream Coffee Cake
Ingredients
1 1/2 cup flour
8 oz. packaged non-instant vanilla pudding (2 packages)
2 tsp. baking powder
2 eggs
1 cup Milk
1/3 cup vegetable oil
3 cups chopped peaches
2/3 cup peach juice
1 cup sugar
16 oz. softened cream cheese
1 tsp. ground cinnamon

  1. Preheat oven to 350 degrees
  2. Mix flour, vanilla pudding, baking powder, eggs, milk and oil in a large bowl.
  3. Pour the mixture into a 9 x 13 inch pan and spread evenly.
  4. Next, top this with the chopped peaches, again spreading the layer evenly, but leave a little texture to the peach pieces.
  5. Mix together the peach juice, sugar and cream cheese.
  6. After it reaches a consistent blend, spread it onto the peach layer.
  7. Sprinkle the top with the ground cinnamon
  8. Bake for 40 to 45 minutes.
