 Peaches is a wonderful, family run Breakfast and Lunch stop that sits just south of the train station in North Conway Village. For over six years, Carol & Tom Stapinski have been running this local gem of a restaurant, and serving to families and couples of all ages.
Their glass top tables are decorated with the most choice napkin art that children from age 3 to 85 have created while dining.
Peaches and Cream Coffee Cake
Ingredients

| 8 oz. |
packaged non-instant vanilla pudding (2 packages) |
| 2 tsp. |
baking powder |
| 2 |
eggs |
| 1 cup |
Milk |
| 1/3 cup |
vegetable oil |
| 3 cups |
chopped peaches |
| 2/3 cup |
peach juice |
| 1 cup |
sugar |
| 16 oz. |
softened cream cheese |
| 1 tsp. |
ground cinnamon |

- Preheat oven to 350 degrees
- Mix flour, vanilla pudding, baking powder, eggs, milk and oil in a large bowl.
- Pour the mixture into a 9 x 13 inch pan and spread evenly.
- Next, top this with the chopped peaches, again spreading the layer evenly, but leave a little texture to the peach pieces.
- Mix together the peach juice, sugar and cream cheese.
- After it reaches a consistent blend, spread it onto the peach layer.
- Sprinkle the top with the ground cinnamon
- Bake for 40 to 45 minutes.
